2023 Domaine Alice et Olivier de Moor Vau de Vey, Chablis Premier Cru, France Indiana 000L barrelThe De Moor purchased 0. 92 hectares of this Premier Cru vineyard in 2017. The name is local dialect for "little valley". The soils feature a heavy marl that remind Olivier of the Rosette vineyard. The hill here is much steeper though. Long alcoholic and malolactic fermentation in 228l barrels. Aged a year or more on the lees without racking or cold stabilization. The wine is normally bottled without filtration but may go through a light, non sterile
